In a large skillet, sauté for 5 minutes:
- 4 Tbsp olive oil
- 2 large chicken breasts, ground
- 2 tsp salt
- 1 cup finely grated onion
Stir in and simmer 15-20 minutes, or until chicken is cooked:
- ½ cup fresh lemon juice
- 1 cup frozen spinach
- 1 serving cooked brown rice
Puree, adding chicken broth or water as needed for desired consistency.
