Arabian Chicken

In a large skillet, sauté for 5 minutes:

  • 4 Tbsp olive oil
  • 2 large chicken breasts, ground
  • 2 tsp salt
  • 1 cup finely grated onion

Stir in and simmer 15-20 minutes, or until chicken is cooked:

  • ½ cup fresh lemon juice
  • 1 cup frozen spinach
  • 1 serving cooked brown rice

Puree, adding chicken broth or water as needed for desired consistency.
