Peel, seed, and coarsely shred cucumbers. Place them in a fine-mesh strainer over a large bowl. Add 1/2 teaspoon of salt and toss to combine. Let sit at room temperature for 1 hr.
Press out the moisture with paper towels – recipe recommends “Line a work surface with 1 layer of paper towels. Arrange the cucumbers in a flat, even layer on the paper towels, top with another layer of paper towels, and gently press to absorb any moisture.” Discard all liquid.
Mix with mayo, ½ teaspoon lemon juice, dill, dried onions (they absorb any extra moisture to prevent this from getting too soupy), and green onion slices or chives.
