Tabbouleh

  • 1 box tabbouleh mix (Bulgar wheat)
  • 1 large can diced tomatoes
  • 1 cup diced onions
  • 1 cup finely chopped parsley
  • ½ a seedless cucumber, diced
  • 1/3 cup olive oil
  • 1/3 cup lemon juice

In a glass bowl, drain and reserve liquid from tomatoes; microwave liquid for 30-45 seconds, or until hot.  Stir in wheat from package and cover. Let stand while chopping vegetables. Mix all ingredients, including the seasoning packet from the box in a large bowl.  Best when it’s refrigerated for at least a few hours.

To make it easier to eat, stir in 2-3 tbsp of hummus.
